Irish Potato and Apple Muffin

The Irish, in terms of potato cooking skills, are probably the most progressive part of humanity. Such a number of recipes with potatoes, as in Ireland, you will not find anywhere else, even in Belarus. Sometimes the Irish offer you to do something completely unusual with potatoes, such as baking a sweet cake from it.
We admit, potatoes do not seem the most obvious ingredient for dessert, but let us recall another vegetable example: carrot cake. Half of the fans of carrot cake do not even suspect that it is called “carrot”, not because it is decorated with small marzipan carrots, and therefore instead of dough there is shredded carrots. Here, with the Irish cupcake, about the same story. There is a potato in it, but its presence is not obvious to taste.
225 g flour
150 g mashed potatoes with milk
2 large sweet apples
150 g butter
2 eggs, lightly beaten
120 g sugar
½ tsp ground cinnamon
½ tsp nutmeg
If it occurs to you to use diluted dry mashed potatoes for this recipe, this idea is perfectly acceptable. However, the puree should be of good quality. If mashed potatoes have a characteristic flavor, which is often the case with the most inexpensive mashed potatoes – taste like a dry, fresh potato mixture, do not use it, and do not be lazy to make puree from fresh potatoes.
Now that we have sorted out the mashed potatoes, you can start cooking. Everything is very fast.
Turn on the oven. Let it warm to 180 ° C. Sift the flour, add spices and butter to it, mix. It turns out crumbling dough. It is necessary to add sugar, and then add mashed potatoes and mix.
Peel and chop the apples into small pieces, stir in the flour mixture, and then break the eggs here. now should get a stiff dough. If it seems thick to you, you can slightly dilute it with a spoon or two of milk. Pour dough into a greased form. Such a cake is baked for quite a long time – about 75 minutes. Start checking it out after an hour and bring it to readiness.
The above recipe is a basic recipe, but another version of the same cake, a little more elaborate. Here the dough is somewhat lighter and therefore the cooking time is less – 50 minutes at the same temperature of 180 ° C.
1/4 cup applesauce
150 g mashed potatoes
1 tablespoon melted butter
1 cup cane sugar
1 egg
3/4 cup milk
1 teaspoon lemon peel
2 cups of flour
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon nutmeg
All dry ingredients are mixed. Then add both mashed potatoes – and apple, and potato, as well as butter. Mix again, then pour the egg and milk and bring to the consistency of thick cream. Fill in the form, as it should be oiled. We bake 50 minutes, and remove the finished cupcake from the mold only when it has completely cooled.
